Bolo De Cenoura - Brazilian Carrot Cake

Brazilian carrot cake aka Bolo de Cenoura, calls for easy breezy preparation. This cake is one of the most popular and traditional Brazilian dessert. You might have already tried varieties of carrot cake but trust me this Brazilian carrot cake is completely different from those usual carrot cakes. Its quite a unique dessert with an incredible topping and looks almost like cornbread. The addition of chocolate sauce gives a fabulous touch to this flavourful carrot cake. You may wonder why am talking about this beautiful cake. Kalyani of Sizzling Tastebuds gave me carrots and cheese as my two secret ingredients for this month's Shhh Cooking Secretly, started by myself and now the event is taken by Mayuri Patel.

Bolo de Cenoura, Brazilian Carrot cake with chocolate sauce


We are supposed to cook from International cuisine as we are cooking since few months under a theme every month for this event. Mayuri gave us Brazilian cuisine and i baked this alluring carrot cake from this cuisine with my two secret ingredients. I used cream cheese for making the chocolate sauce as per one of my secret ingredient given by Kalyani though cream cheese is not used in the traditional carrot cake. Thanks to Kalyani for giving me carrots, else i would have never tried my hands in baking this incredible carrot cake.If you are looking for an easy cake, then give a try to this fantastic cake.

Brazilian carrot cake, Bolo de Cenoura

Recipe Source: Easy Brazilian Recipes
For Cake:
3nos Carrots (nicely minced)
3nos Eggs
1/2cup Oil
2+1/2cups Flour
1+1/2cup Sugar
1tbsp Baking powder
1/2tsp Vanilla extract

For chocolate sauce:
1tbsp Butter
3tbsp Sweetened Cocoa powder
1/4cup Sugar
3tbsp Cream cheese
2tbsp Milk

Blend the minced carrots, eggs in a blender, add the sugar and beat again for few minutes.

Once blended to a smooth texture add the remaining ingredients and mix gently, dont overmix.

Preheat the oven to 350F, grease a square or rectangular cake mould.

Pour this mixture in the already prepared mould and bake for 30-35minutes until the top turns brown.

Let it cool completely.

Take all the ingredients for making the sauce in a saucepan, bring to boil.

Once it reaches sauce consistency, put off the stove.

Pour this chocolate sauce over the cake, spread it well over the cake.

Enjoy the cake with your favourite drink.

Priya the cake looks very tempting and never would have thought of combining carrot and chocolate together.
